Lagos, Nigeria – Nigerian chef Hilda Baci has set a new world record after preparing the largest serving of Nigerian-style jollof rice, weighing 8,780 kg, at an event in Victoria Island, Lagos last Friday.

Hilda, whose real name is Hilda Bassey, partnered with brand Gino Nigeria to serve 16,600 plates of the dish to thousands of attendees, accompanied by live performances and community celebrations. The massive cooking effort took nine hours and required 1,200 kg of gas. Ingredients included 4,000 kg of basmati rice, 164 kg of fresh goat meat, 220 kg of Gino Asun and peppered chicken cubes, and 600 kg of her own jollof pepper mix.

The event was organised under strict rules to ensure none of the food was wasted. Participants cheered, chanting “Hilda, we want jollof,” as volunteers distributed the plates to the crowd. Hilda described the effort as a collective achievement, crediting the people of Nigeria for supporting the record attempt.

The feat comes after Hilda previously set the world record for the longest individual cooking marathon, spending 93 hours 11 minutes in May 2023. Her latest achievement has reignited the ongoing “Jollof Wars” debate between Ghana and Nigeria over who makes the best jollof rice.

No current record exists for the largest serving of Ghanaian-style jollof rice, leaving the door open for a potential challenge from Ghanaian chefs in the future.
